I have to say that if you plan on having some leftovers of these No Bake Thin Mint Cookie Truffles, then you should plan on quadrupling the recipe.
Honestly, this is one of my favorite recipes using thin mint cookies. I make them up and bring them to a party and they are the first thing gone! Obviously, I am happy everyone loves them but sad I never have any to indulge with at home.
Recipe Ingredient Notes
To make No Bake Thin Mint Cookie Truffles, you will need the following ingredients:
- Girl Scout Thin Mint Cookies, 1 package, (or Keebler Grasshopper cookies)
- Cream Cheese
- Guittard Green Mint Chips, 1 bag
Equipment Needed
For this recipe, you only need a few simple kitchen tools. We recommend using the following equipment:
How to make No Bake Thin Mint Cookie Truffles
- Blend cookies in a blender or food processor until fine crumbs form. Set aside ¼ cup crumbs to sprinkle on top of truffles, if desired.
- Place cookie crumbs and softened cream cheese in a large mixing bowl and mix until well combined.
- Roll mixture into 1 inch sized balls and place on a baking sheet lined with parchment or wax paper.
- Place baking sheet in the fridge for 30 minutes.
- Melt mint chips (or white chocolate chips) in a microwave-safe bowl in the microwave in 30-second increments, stirring each time, until melted (about 2 minutes).
- Add food coloring to melted white chocolate chips if using white chocolate.
- Dip each ball into melted chocolate until completely covered using two forks. Lift ball out of the chocolate and scrape off excess chocolate before placing on baking sheet.
- Sprinkle on cookie crumbs for garnish, if desired.
- Place truffles in the fridge for a few minutes to set up.
Storing and Other Tips
These will do well in an airtight container in your fridge for 2-3 days so they are ready for your event when you need them (if they last that long).
If you are interested in decorating the cookies as I did, you will need to melt about a ½ cup of white chocolate chips (or whatever flavor you prefer) the same way you did the green mint chips. Then pour the white chocolate into a small ziplock bag and cut a small corner of the bag.
Using the bag drizzle the white chocolate over the top of the green chocolate coating. You could also put some fun sprinkles or cookie crumbles on top as well!
Then simply return them to the fridge to harden back up.

Cool tip: To keep the melted mint chips or candy-coating soft and workable while you dip the truffle in it, set your bowl on a heating pad...yep, the kind you use for an aching back...here's a new use for it!
