- Line a large baking sheet with aluminum foil and lightly spray with non-stick cooking spray.
- Spread beans in a single layer on a large baking sheet and drizzle with olive oil.

Out of personal preference, we like to “snap” the ends off of the fresh green beans. However, it really is your choice if you choose to cut off the ends of the green beans or not. We prefer these beans without the extra string, especially as these green beans in the oven may cause the strings to burn.
We would not recommend roasting frozen beans for this recipe. While you could attempt to cook them thoroughly by thawing them, patting them dry, and adding an extra 10-15 minutes, the extra moisture from frozen beans tends to make them mushy.
No, this recipe does not require blanching. Just make sure that you rinse the beans and dry them well before you dress the beans.
This could be one of two things. Before you placed the beans on the large baking sheet they weren’t dried well enough so the beans had added moisture. The other issue would be that they could have used a little olive oil before putting them in the hot oven.
