- Freshness. Freshness of the meat should be a top priority! For optimal flavor buy the steak the fresh the same day you’ll be grilling!
- Marbling. Look for steaks that are well marbled with fat (ask your local butcher for tips!). Those ribbons of fat will dissolve during the slow cook and moisten the meat from the inside.
- Prep Your Steak. Before grilling, leave enough time to allow your steaks to come to room temperature. Having your steaks start out at room temperature means more even cooking throughout.
