Tips For Great Cupcakes Every Single Time
- One little secret is that ingredients should be at room temperature. So bring your eggs, cream cheese, sour cream, milk or other refrigerated ingredients out of the fridge at least 30 minutes before baking.
- Do not overmix the batter as this will lead to tough or chewy cupcakes. Try mixing by hand using a whisk, rather than an electric mixer.
- Use a cupcake scoop to fill the cupcake liners. This is one of the best ways to ensure evenly baked cupcakes.
- Do not overfill cupcake liners. The only thing worse than a dry cupcake is burnt cupcake batter all over your pan or oven. Keep them filled to only 2/3 of the way full.
- Bake cupcakes in the center rack of the oven for evenly cooked cupcakes!
- Use the touch test rather than an inserted toothpick. If the cake bounces back after a gentle poke, it’s done!
- Remove cupcakes from the pan to cool on a wire rack, rather than leaving them in the tin where they may continue cooking after removing from the oven.
- Only frost COOLED cupcakes. I know it’s hard to wait, but if you frost cupcakes that are still warm, your favorite frosting will melt everywhere.
