- Cream. Beat the butter and sugar together on high speed until fluffy and significantly lightened in color with either an electric mixer or stand mixer.
- Combine the remaining wet ingredients. Mix the egg into the butter mixture followed by the Greek yogurt. Mix in the vanilla on medium speed.
- Put it all together. In a separate bowl, mix the dry ingredients (aka the flour mixture) into the wet ingredients followed by the mashed banana.
- Make the cream cheese layer. Beat the cream cheese and sour cream together on high speed until smooth. Mix in the egg, sugar, vanilla, and flour.
- Assemble. Pour half of the bread batter into the prepared loaf pan and smooth it out. Pour the layer of cream cheese on top and smooth it out. Do not mix the layers together. Pour the second half of the banana bread batter over the cream cheese layer and smooth it out. Do not mix the layers together.
- Bake. Bake for 1 hour or until a toothpick inserted into the middle of the banana bread comes out mostly clean.
