Now that I am officially outnumbered with three kids, I am all about convenience.
I love making cookie bars because they are just as easy to whip up as a batch of cookies but you just spread the dough in the pan and bake them, rather than baking a batch of cookies at a time.
I love anything chocolate and peanut butter and these bars were no exception.
If you know of, or are, a chocolate peanut butter loving fan, we highly recommend this recipe.
could i make this recipe using crunchy peanut butter?
We used creamy peanut butter for this recipe but you could easily use crunchy peanut butter. You could also use creamy peanut butter and add some lightly salted peanuts (we recommend crushing them up a bit) for a little bit of texture.
I prefer them without the extra nuts, but my husband loves when they have a little crunch to them.
how to press them into the pan:
For this recipe, we recommend not pressing the dough fully into the edges of the pan. Instead, you will want to leave about a 1/2 inch gap, because as they bake, they spread out a little bit.
If you don’t, it will create a large lip when it’s pressed against the edges. If you are a crust person, you could do that, but we recommend leaving a gap between the edge of the bars and the pan.
would frosting be good on these?
I am in love with our Lunch Lady Peanut Butter Bar recipe, because of the peanut butter and chocolate frosting layers.
These bars are a little more rich because of the chocolate chips, but you could definitely top them off with a thin layer of peanut butter, or our rich chocolate frosting from our peanut butter bars.
You could also replace the chocolate chips with M & M’s, peanut butter chips, caramel chips, butterscotch chips, candy pieces, etc.

Peanut Butter Chocolate Chip Cookie Bars Recipe
Ingredients
- 1¾ cup all-purpose flour
- 1¼ cup light brown sugar, packed
- 1 cup creamy peanut butter
- ½ cup butter, softened to room temperature
- 3 Tablespoons milk
- 1 large egg
- 1 Tablespoon vanilla extract
- ¾ teaspoon salt
- ¾ teaspoon baking soda
- 2 cups milk chocolate chips
Instructions
- Preheat oven to 375 degrees F. Spray a 9x13-inch baking dish with nonstick cooking spray.
- Mix flour, brown sugar, peanut butter, butter, milk, egg, vanilla, salt and baking soda together in a bowl until combined. Fold in chocolate chips.
- Spread into prepared baking dish and bake for 20 minutes, or until an inserted toothpick comes out clean.
