This pasta is quick and easy and tastes great. The added chicken can make it your main course, and it’s a recipe your whole family will like.
My husband is not much of a veggie lover, but he didn’t even notice the vegetables in this. They were smothered in sauce, and he ate the entire plate, plus seconds and thirds.
I think this recipe will definitely be making an appearance in our home more often. It was so simple, and perfect for little eaters, and picky eaters.
It’s also the perfect dish, when you feel like you don’t have any ingredients on hand. It’s simple, delicious, and full of flavor.
does this recipe freeze well?
I have only made this recipe fresh. However, if you have leftovers and want to freeze them, or even double the recipe and want to freeze it for another night, you definitely could.
Everything should freeze well, but you may need a little more sauce or cheese when you reheat it, because it will sink in to the chicken and noodles a little more.
We also recommend freezing it in an airtight container, to help it stay fresh in the freezer. We suggest eating it within a week or two of making it, for the best results, and best tasting leftovers.
Would any noodle work?
For this recipe, I used pasta shells. However, you don’t have to use pasta shells. I just prefer it, because the noodles are easier to stab, and it’s perfect for little fingers.
Really any noodles or pasta you have on hand, will work for this recipe.
I have also made it using spaghetti noodles, as well as bow tie and penne pasta, and they both tasted the same, and just as delicious.
I have also made this with whole wheat noodles and it was very tasty and a healthier alternative as well.

Garlic Tomato Pasta Recipe
Ingredients
- 16 ounces pasta, 1 box
- 15 ounces ricotta cheese
- ½ cup water
- 1 cup cherry tomatoes, diced
- 1 boneless, skinless chicken breast, cooked and cubed
- 2 cups baby spinach leaves
- ⅛ teaspoon salt
- ⅛ teaspoon pepper
- ½ teaspoon garlic powder
- ⅛ teaspoon garlic salt
- ½ cup shredded Parmesan cheese
Instructions
- Boil the shells according to the package. Drain the water.
- In another bowl combine the ricotta cheese and water
- Microwave the mixture for 1 minute and stir until creamy.
- Add in the diced tomatoes, cubed chicken, and spinach leaves.
- Mix in the salt, pepper, garlic powder, and garlic salt until well combined.
- Toss well and top with shredded Parmesan cheese.
Notes
- Any noodles or pasta you have on hand, will work for this recipe.
