I was a bit of a picky eater growing up – and black beans were definitely on my “never going to try” list. I can’t remember who convinced me to try them once I had grown up a little bit – but I fell in LOVE. Once I tried them, I kicked refried beans to the curb. Permanently. This recipe is so simple, but it is one of my favorite ways to eat them. It makes a great side dish or topping for any Mexican main dish!
Easy Black Bean Recipe
These beans are SO easy to throw together - and they make a great side dish or topping for all your favorite Mexican dishes.

Ingredients
- 2 (16 ounce) cans black beans, (drain one, and leave the liquid from the other one)
- ½ white onion, diced
- 1 clove garlic, minced
- 2 Tablespoons fresh cilantro, chopped
- 1 1 ounce packet ranch dressing mix
- salt and pepper, to taste
Instructions
- In a large saucepan, combine beans, onion, and garlic and bring to a boil. Reduce heat to medium low, and then add in cilantro, ranch dressing, and salt and pepper. Simmer for 5 minutes, and then serve.
