When we were little we had the same routine after school. You got home, washed your hands, then jumped on a barstool to see what Mom had in store for an after school snack.
I always loved her snacks that she prepared. Now that I have kids of my own I love making fun treats for them while they watch on the barstools.
Back to school season really is coming up fast and these BaNilla Wafer Bites are perfect for a fun after school snack. It only takes 5 ingredients and a few minutes to throw together.
Plus, they are pretty darn tasty. I love eating these, and so does my husband.
It really only takes 5 simple ingredients, that are rarely inexpensive, and will make quite a few, so you can make them all week long.
Trust us, you will crave these every single day.
I first tried spreading the peanut butter on the bananas and realized it is SO much easier to spread them on the vanilla wafers.
steps to make banilla wafers:
- Step 1: Take two vanilla wafers and spread peanut butter on both of their flat sides.
- Step 2: Put on your banana slice.
- Step 3: Put your other peanut butter vanilla wafer on top of the banana.
- Step 4: Dip your BaNilla wafer sandwich in chocolate and sprinkle with sprinkles, or a desired topping.
-Quick Tips-
If you are using large bananas you can use normal Vanilla Wafer cookies. If your bananas are medium or small bananas, use Mini Vanilla Wafer cookies instead.
Store in an airtight container in the refrigerator up to 10 hours. They are best right after you make them. If you go longer than 10 hours, your bananas will start to go brown and the cookies will go soft.
Sometimes the banana would move a little bit when I would dip it in the chocolate. All you need to do is move it back into place after you dip it in chocolate so it will harden exactly where you want it!
If you have little kids, I would suggest getting the mini wafers and a smaller banana. That way, they are easier to eat.

what could i replace the sprinkles with?
For this recipe, the sprinkles add a fun pop or color for the kids. However, as an adult, here are a few of my favorite additions:
- Shredded coconut
- chopped almonds
- chopped peanuts
- chopped pecans
- chopped macadamia nuts
- chopped walnuts
You can really add whatever toppings you want, or have on hand, but I love the nutty combination or the sweetened coconut on mine.

BaNilla Wafer Bites Recipes
Ingredients
- 1 box Kroger Vanilla Wafer Cookies
- 1 container Kroger Creamy Peanut Butter
- 4 bananas, sliced in ½" slices
- 1 cup Kroger Chocolate Chips
- sprinkles
Instructions
- Spread a small amount of peanut butter on each wafer, place a slice of banana in the middle and close like a little sandwich.
- Melt the chocolate chips on the stovetop or in the microwave until completely melted. Very carefully dip the banana sandwich into the chocolate. I dipped about half of it in the chocolate. As soon as you dip them in chocolate, put on some sprinkles.
- Place your chocolate dipped Banilla Wafer Bites on some wax paper or foil. To make the chocolate harden faster, you can place them in the refrigerator for about 10 minutes.
