How do the chocolate chips and cherries not sink?

For this Cherry Chocolate Chip Cake recipe, we recommend, coating the chocolate chips in a little bit of the cake mix.

This will help them stick and stay in place, when combined with the cake batter mixture.

You also want your cherry bits to be pretty small. The bigger they are, the more likely they will sink.

Ingredients

Cake

  • 1 cup mini Semi Sweet Chocolate Chips
  • 16.25 ounces white cake mix , 1 box, divided
  • ¾ cup water
  • ½ cup sour cream
  • ⅓ cup vegetable oil
  • 1 teaspoon almond extract
  • 4 eggs, just use egg whites
  • 20 ounces maraschino cherries, 2 (10 ounce) jars, divided, drain and reserve juice and chop cherries

Frosting

  • 1 cup butter
  • 4 cups powdered sugar
  • 1 teaspoon almond extract

Cake

  1. Heat oven to 350 degrees F. Grease and flour a 9 x 13 inch baking dish.
  2. In a small bowl combine the chocolate chips with 1 Tablespoon of the dry cake mix. Stir until all of the chocolate chips are covered.
  3. In a large mixing bowl beat together the remaining cake mix, water, sour cream, vegetable oil, almond extract, and egg whites on low speed for about 30 seconds.
  4. Then beat on medium speed for about 2 minutes.
  5. Chop the cherries and be sure to pat them dry with a paper towel so they won't streak your white cake mix.
  6. Stir in 1 cup of the cherries and the chocolate chips into the cake batter. Then pour into the prepared pan. (Remember to reserve the juice and 15 cherries for the frosting)
  7. Bake for about 32-35 minutes or until cake springs back when touched lightly in the center. Cool completely before frosting.

Frosting

  1. Beat together the softened butter and powdered sugar until smooth. Then add in the almond extract and 1/3 cup cherry juice reserved from the cherries. Mix until well blended. If the frosting is too thick, add a little more cherry juice. If it's too runny, add in more powdered sugar. When you get to the desired consistency, stir in 15 chopped cherries that have been patted dry with a paper towel.
  2. Spread frosting over the cooled cake.

Notes

We used the Betty Crocker white cake mix.

    How do you keep the chocolate chips & cherries from sinking to the bottom?

    We didn't have a problem with them sinking to the bottom. The chocolate chips are coated in the tablespoon of cake mix as explained in Step 2 of the directions. This prevents them from sinking.

    Can I make this in a bundt pan and if so what temp and how long?

    Will this recipe work for 2-9 inch layers?

    This should work fine in 9 inch layer pans.

    Why is the cake mix divided? Do you only use half of the box?

    Because in Step 2 you need to measure out 1 Tablespoon of cake mix to add to the chocolate chips. In Step 3 you follow the instructions for the remaining cake mix.

    This cake is delicious, even without the frosting. I didn't frost the cake because I thought it would be too sweet for my taste. Instead I just sprinkled some powdered sugar on top. It was perfect! Thank you for sharing this delicious recipe. I will definitely be making it again.
