I have always loved our honey granola, but lately we have been on a MAJOR almond butter kick.
I decided to switch it up and make it with almond butter, and I added in some coconut chips and chopped almond.
The good news is, it turned out great. The bad news is, I can’t stop eating it. It tastes great in a yogurt bowl (pictured below), paired with almond milk, or just eaten plain with a spoon.
I love this as a snack. I will put it in my kids school lunches, or send them out the door, on busy mornings.
Whether it’s eaten as a snack, breakfast, topping off a desert, or pairing with yogurt, you are going to love the sweet and crunchy flavor or this granola. It is definitely a must try.
Ingredient Notes
- Quick Oats
- Chopped Almonds
- Coconut Chips
- Salt
- Cinnamon
- Almond Butter
- Coconut Oil
- Honey
- Vanilla
How to make Almond Butter Granola
- Preheat oven to 325 degrees.
- In a medium bowl, mix together oats, almonds, coconut chips, salt and cinnamon and set aside.
- In a saucepan over medium heat, mix together almond butter, coconut oil, and honey until smooth. Remove from heat and add vanilla.
- Pour almond butter mixture over dry ingredients, and stir until completely combined. Spread granola over a lightly greased baking sheet. Bake for 18-20 minutes (stirring once halfway through cooking), until coconut is toasted and granola starts to brown.
- Remove from oven and let cool.
- Transfer to a mixing bowl or storage container (will keep fresh for 1-2 weeks).
Storing and Other Tips
Storing granola is simple, and it lasts for about 2 weeks.
I usually put mine in an airtight container, but you could also put it in a ziploc bag.
Sometimes for holiday, I will make this for neighbors, and put it in a plastic bag, with ribbon around it.
Just as long as it doesn’t have a lot of open air, or is being exposed, it should stay fresh for about 2 weeks.
What can I put this granola on?
Yogurt. I love the combination of smooth and crunchy. I am a texture person, and I think it just goes so well together.
Coffee Cake. Have you ever tried putting granola on your coffee cake? Well you need to. Especially this Almond Butter Granola.
Smoothies. I love a good smoothie bowl. I am not much of an acai fan, but I love smoothies with granola on them.
