Why are game foods so darn good???
We watch the Super Bowl every year as a family, but I can’t tell you the last time I knew who was playing, but I knew what treats everyone was bringing. I am who I am.
These nachos are perfect for feeding a crowd during any game, or they also make a great main dish. They aren’t kidding when they say these are loaded nachos!!
If you have ever been to Rainforest Cafe, one of my favorite dishes is their Beef Lava Nachos . . . I did my best to recreate it here.
They have so much flavor to them. I also love how versatile they are. You could add any meat, or vegetables and sauces you want to them. The universe is the limit with these delicious nachos.
What other meat could I make these Rainforest Cafe Copycat Beef Nachos with
If you are not a ground beef fan, that is not a problem. There are many other delicious meats, you could replace ground beef with, in this recipe.
-I personally love to add a good grilled and shredded chicken to my nachos. I am a chicken person, and I even love it on nachos. If you have never tried chicken nachos, stop what you are doing and make them.

-I am also a big steak lover. Steak goes with just about everything, but steak and nachos… that is a match made in heaven. Pile on all the toppings, and you have yourself a huge snack, or a meal.
We love our mom’s Juicy Steak Marinade. It is so delicious and simple, and seriously makes the steak so tender and full of flavor.
-Ground turkey is my go to meat lately. It can be used in place of ground beef in every recipe, including hamburgers. I make the ground turkey, the same as I would the beef, in this recipe. It is that simple.
-Vegetarian. If you are not a meat person, that’s okay, we still love you. This could easily be made without any meat, and still taste absolutely amazing. You are going to love it.
What could I add to make these Rainforest Cafe Copycat Beef Lava Nachos more saucy?
I am a sauce person. The type of person that asks for sauce when I order, then when I get my meal at the window, I ask for more sauce.
I only really do this at Chick Fil A, because I am pretty sure there is some addictive substance in that Polynesian Sauce. You can’t blame me for wanting more.
However, I also like my nachos extremely saucy. They aren’t nachos if you are drooling more than the actual nachos. They need some love.
Luckily, we have the cure. You have to put a little bit of our Chilis Skillet Queso Dip, on your nachos. The cheese, with the chili, and the hint of lime, with a little kick to it, will pair nicely with these nachos.

Rainforest Cafe Copycat Beef Lava Nachos Recipe
Ingredients
- 1½ lbs lean ground beef
- 1 yellow onion, diced
- 1 ounce packet taco seasoning
- ⅓ cup water
- 10 ounce bag tortilla chips
- 1 (14oz) can black beans, rinsed and drained
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1½ cups shredded Monterey Jack cheese
- 1½ cups shredded cheddar cheese
- 3 green onions, diced
- ½ cup sour cream
- 1 cup pico de gallo, (or favorite salsa)
- ½ cup guacamole
Equipment
Instructions
- In a large skillet over medium high heat, brown ground beef and onion until beef is no longer pink. Add in taco seasoning and water, reduce heat to low, and let simmer for 4-5 minutes.
- On a large platter, spread out a single layer of tortilla chips. Top with half of the beef mixture, half of the black beans, half of the red and green bell peppers, half of the cheese, and half of the green onions. Repeat layers.
- Place nachos in microwave and heat for 60 seconds or until the cheese starts to melt or place in an oven at 350 degrees until the cheese starts to melt.
- Top nachos off with sour cream, Pico de gallo, and guacamole.
- Serve immediately.
