Just when you though baked potatoes couldn’t get any better, we added sweet BBQ pork, switched it out for a sweet potato, and topped it with melted cheese.

I like to make this recipe on busy nights when I know we aren’t going to be home. I can make everything ahead of time, then assemble them when I get home.
How to make Barbecue Pork baked sweet potatoes
Step 1: Spray the inside of slow cooker with non-stick cooking spray (or use a slow cooker liner).
Step 2: Combine paprika, salt, pepper, garlic powder, dry mustard, and liquid smoke in a small bowl.
Step 3: Rub all over the roast, covering all sides.
Step 4: Poke your roast with a large fork a couple of times to let the flavors really soak in.
Step 5: Place lid on slow cooker and bake on low for 8-10 hours (or high 5-6 hours).
Step 6: Shred meat when finished and add bottle of BBQ sauce.
Step 7: To cook potatoes, dampen a paper towel and wrap potato, covering all sides and ends.
Step 8: Microwave each potato for 3 minutes, stop the microwave and rotate potatoes.
Step 9: Microwave for another 3 minutes.
Step 10: Depending on thickness of your potato, microwave again until soft if needed.
Step 11: Cut potato in half lengthwise and fill with meat.
Step 12: Top with cheese and green onions. Broil potatoes on high for 2-3 minutes until cheese melts and begins to brown.
Step 13: Remove from oven and enjoy. Garnish with desired seasonings
How to bake a sweet potato
First things first, the baked potato. Have you ever tried cooking a sweet potato in the microwave? Once you try it you will never go back.
Start by piercing the potato with a fork a few times, then wrap with a damp paper towel. Microwave on high for about 7 minutes, and you’ll have a perfect potato every single time.
You can also wash them in water, wrap them in aluminum foil and bake at 400 degrees for 35 -40 minutes.
How to get your cheese and toppings perfectly melted
Slice your potato in half and top with some of the delicious barbecue pork. Top with green onions, mozzarella cheese, and a little more barbecue sauce.
Broil your potato on high for about 3 minutes or until the cheese is melted.
Eat immediately and enjoy. I always like to have a little barbecue sauce for dipping or for an extra drizzle on top, but I’m a sauce person.

Ingredients

- 2 pound pork shoulder roast
- 16 ounces BBQ Sauce
- 4 sweet potatoes
- 1 cup shredded Mozzarella cheese
- 6 green onions, diced
