Has anyone else ever felt like they are completely out of ideas for side dishes? I always feel like I am making the same thing every single week.
I’m also guilty of buying a lot of vegetables in hopes of eating healthy during the week, and having most of them go bad before I get around to preparing them.
In hopes to change my ways, I think I finally found the solution to a good vegetable, soak them in garlic butter. You’re welcome. Every vegetable from here on out, will become your new favorite food.
They are so tender and full of flavor. You are going to love these.
How to make roasted garlic butter carrots
Step 1: Preheat oven to 400 degrees.
Step 2: Peel and slice carrots in half. Make them about 1 inch pieces.
Step 3: In a small bowl, melt garlic butter and stir in basil.
Step 4: Spread carrots evenly into a glass 9×13 pan.
Step 5: Pour butter over carrots and toss until all of them are coated.
Step 6: Bake for 40 minutes, stirring and flipping carrots once halfway through.
Serve warm.
how to make your own garlic butter
Garlic butter is so easy to make. We bought ours from Kroger, but you can make your own, just as easily.
-For this particular recipe, I would recommend using about 1/3 cup of butter, or any type of spread of your choice.
-You will need one garlic clove, minced. You could also use about 1 teaspoon of of garlic powder as well if you don’t want fresh garlic.
– Heat stove top to medium heat. Add the butter and garlic powder. Stir and shift around on a pan until the butter is fully melted and the garlic is fully incorporated.
-Once melted and fully incorporated place in a jar or storage container until ready to use. If you are using it right away for this recipe, it can remain melted, and you can poor it immediately over your carrots.
I am LOVING the purple, yellow, and orange carrot mix. Regular orange carrots would work great for this recipe, or baby carrots. We found our garlic butter just next to the spreadable butter at our Kroger store.
