Getting in enough vegetables every day, has proven to be one of the most difficult things for us. I get so sick of vegetables so quick, so we’ve been trying to find ways to throw them into our meals.
My husband is on a sweet potato kick and is constantly requesting them. I threw together this Sweet Potato Sausage Hash with some of our favorite vegetables, and of course his favorite sweet potatoes.
The best part about this recipe is that any leftovers can be reheated for a delicious hot breakfast the next day.

How to make sweet potato sausage hash
Step 1: Chop sweet potatoes (peel if desired) and place in skillet with 1 Tablespoon of olive oil, over medium heat.
Step 2: Stir potatoes until coated in olive oil.
Step 3: Cover skillet and cook until potatoes are cooked through (about 10 minutes).
Step 4: In a separate skillet, heat remaining Tablespoon of olive oil.
Step 5: Cook sausage, peppers, onion, and spices until onions and peppers are cooked through.
Step 6: Transfer potatoes from skillet to vegetable and sausage skillet and stir until combined, being careful not to mash the potatoes.
Step 7: Clear four areas on your skillet to crack eggs. Crack eggs and cover skillet for 5-7 minutes, allowing eggs to cook.
Step 8: Serve warm, with an egg in each serving.

Why do they call it a hash?
Hash is a French term that comes from the word, hasher, which means, to chop. A hash is a combination of chopped vegetables, meat and various spices.
This Sweet Potato Sausage Hash is our favorite, because you could easily swap out ingredients. If you don’t like or have sweet potatoes, you could also use regular potatoes.
It’s a very flexible recipe that is perfect for breakfast, brunch. lunch or dinner. Your picky eaters will love this one.
You can also cook the eggs as you prefer. My kids don’t like a runny yolk, so we scramble the eggs with the sausage and potatoes in the pan.
You could also scramble them separately, but I’m just lazy and don’t want to wash another dish.

Ingredients
