The holiday season brings a lot of delicious desserts. With so many options, we’re all about finding those “mini” options so we can try more without getting too full too fast!
These Bite Sized Cherry Pies are a delicious way to spread holiday cheer! Make them larger for your family’s dessert, or even smaller to give to your family and friends.
These are pretty similar to our Apple Hand Pies, so if you haven’t checked those out yet, we’d highly recommend doing so!
How to make Bite Sized Pies
If regular pie wasn’t intimidating enough, now we’re making small ones? Don’t let these cute little desserts fool you, they are so easy to put together in half the time of a regular homemade pie.
Here are the easy step by step instructions on making delicious Bite Sized Cherry Pies.
- Remove pie crust dough from refrigerator and thaw at room temperature for at least 20 minutes.
- Roll out each pie crust and cut into 2″x3″ squares, we found this easiest with a pizza or pastry cutter.
- Roll out uneven squares to be equal sizes with a rolling pin.
- Taking two squares, place 3-4 cherries in the middle of one square, and cut “V” shaped lines in the other square. Make sure not to connect your “V” to avoid your pie filling from spilling out.
- Place cut dough over cherries and seal the edges with a fork.
- Repeat with all dough squares (this should make about 12 mini pies).
- In a small bowl, whisk together egg whites and vanilla until frothy.
- Using a basting brush, brush egg wash over each mini pie.
- Sprinkle with sugar for a delicious crispy sugar coated crust.
- Bake for 12-15 minutes, or until pie crust begins to golden. Don’t worry about your pie filling bubbling out a little bit, this will happen if your cuts are a little too large, or if they connect.
Homemade Cherry Pie Filling vs Canned
We used store bought pie crust dough and canned cherry pie filling for this recipe, but those can easily be replaced with your favorite homemade crust and filling.
Here’s a quick recipe for homemade cherry pie filling:
- 2/3 cup sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 4 cups fresh tart cherries, pitted
- 1-1/2 cups water
- 2 tablespoons lemon juice
In a large saucepan, combine the sugar, cornstarch and salt. Add the cherries, water and lemon juice. Bring to a boil; cook and stir for 2 minutes or until thickened.

How to make the perfect egg wash for pie
Topping your pie with the perfect egg wash can take your pie to the next level! It’s a step that only takes a few minutes but makes all the difference.
Here’s a simple recipe for egg wash that we use on our pie!
1 egg white
1 teaspoon vanilla
1 Tablespoon milk
Whisk together until frothy and brush onto pie crust.
The vanilla in this recipe is totally optional. We love the sweet taste it gives to the crust, but it can be left out for more savory pies, like Chicken Pot Pie.
