The sun is shining and it’s FINALLY Spring! Sometimes I feel like winter lasts 11 months and we get one nice month before it’s snowing again, if we’re lucky.
I’m taking advantage of this beautiful weather and putting together some summer side dishes a little early. This Spinach Cucumber Strawberry Salad is screaming summertime bbq, springtime picnics, and garden fresh everything.
Substituting greens for spinach
Spinach has always been my go-to base for salads because of all the health benefits! It’s full of iron which is something we, especially as women, never get enough of.
There are lots of other leaves and greens that would work great in this recipe. Kale, romaine lettuce, and iceberg lettuce are a few that we’ve tried and loved, but whatever your family will eat is perfect.
We recommend chopping up your leaves to give it more of a chopped salad feel. This always makes it easier to eat and guarantees each flavor in every single bite.
If you’re not a greens kind of family, this salad is delicious without the spinach or leaves at all. Cucumbers and strawberries go great together, topped with feta cheese, pecans, and the dressing, you’ve still got a delicious side dish.
How to Make Homemade Balsamic Dressing:
This salad is delicious mainly because of the delicious homemade dressing it’s tossed in. You can save so many calories and added ingredients by making your own dressing at home, and most of the time it tastes much better anyways.
Here’s what you’ll need to make the best homemade balsamic dressing:
- 1/3 cup extra virgin olive oil
- 1/3 cup balsamic vinegar
- 1/2 teaspoon crushed garlic
- 1 teaspoon ground mustard
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
Pull out your blender and blend all of these ingredients together. We recommend blending to avoid bites with too much garlic. If you’re in a hurry and need to just whisk your dressing together, we’d substitute the garlic for garlic salt and whisk until it’s dissolved.

Spinach Cucumber Strawberry Salad Recipe
Ingredients
- 5 cups spinach, chopped
- 1½ cups fresh strawberries, chopped
- 3 cucumbers, sliced
- ⅓ cup pecans, chopped
- ¼ cup crumbled feta cheese
Dressing:
- ⅓ cup olive oil, extra virgin
- ⅓ cup balsamic vinegar
- ½ teaspoon garlic, crushed
- 1 teaspoon ground mustard
- ¼ teaspoon salt
- ⅛ teaspoon pepper
Instructions
- Toss together spinach, strawberries, cucumbers, pecans, and feta cheese.
- In a small blender, blend together dressing ingredients.
- Pour desired amount of dressing over salad and toss.
- Chill in the fridge until ready to serve.
