Baked oatmeal is a great option for feeding a your whole family breakfast. You can easily double this recipe as well.
Recipe Ingredient Notes
There’s a good chance you already have the ingredients for this delicious breakfast recipe! Here’s a list of everything you’ll need.
- 3 cups rolled oats
- ½ Tablespoon cinnamon
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ cup chopped walnuts
- 3 ripe bananas (mashed)
- 2 eggs
- ¼ cup maple syrup
- 1 teaspoon vanilla
- ½ cup unsweetened almond milk
How to Make Banana Cinnamon Baked Oatmeal
- Preheat oven to 350 degrees.
- Spray a 9×13 pan with cooking spray and set aside.
- In a large bowl, combine oats, cinnamon, baking soda, salt, and walnuts. Toss until well combined.
- In a separate bowl, mash bananas and stir in eggs, maple syrup, vanilla, and almond milk.
- Pour wet ingredients into the bowl of dry ingredients and stir to combine until all oats are coated.
- Pour oat mixture into 9×13” pan. Top with additional walnuts and sprinkle with cinnamon if desired.
- Bake for 30 minutes and serve warm.
Storage Tips
If your family doesn’t finish this in one sitting, these leftovers can easily be stored in the fridge for up to four days. Just reheat it in the microwave for a quick breakfast!
