Ingredient Notes
- Boneless skinless chicken breasts
- Chicken broth
- Caesar salad dressing
- Shredded Parmesan cheese
- Fresh parsley
- Ground black pepper
- Shredded romaine lettuce
- Buns
How to make Instant Pot Chicken Caesar Sandwiches
- Place chicken breasts in inner pot of Instant Pot. Add in chicken broth.
- Turn the valve to “seal” and set Instant Pot to manual for 6 minutes. It will take 5-10 minutes for the Instant Pot to come to pressure.
- Once the chicken is done cooking, let it do a natural release for 5 minutes (don’t touch anything!) and then move the valve to “vent” to release remaining pressure.
- Remove the chicken from the liquid and shred using 2 forks.
- Place shredded chicken in a bowl, along with dressing (use more or less to your liking), Parmesan cheese, parsley, and black pepper.
- Spoon chicken mixture onto buns, top with lettuce, and serve.
Tip: If you are using frozen chicken breasts give yourself a little more time. Cook the chicken for 10 minutes on manual. It will take about 10-12 minutes for the Instant Pot to come to pressure when using frozen chicken.
Storing and Other Tips
You can put leftover Caesar Chicken Mixture in a airtight container or a zip top bag and it should last in the refrigerator for about 3-5 days.
- You can use either shredded parmesan or grated parmesan cheese
- The more dressing you add the creamier it will be (make it however you like!)
- If you don’t have fresh parsley dried parsley can be substituted, however fresh is my favorite
- If you don’t like Caesar dressing or don’t have any on hand, feel free to use ranch dressing instead. It will have a different flavor, but will still be delicious.
- Romaine lettuce can be substituted with your favorite greens
- This is also a great recipe to use a rotisserie chicken with – just pick up a rotisserie chicken at the store, shred it up, and start at the 5th step in the directions!
- You can also cook this chicken in a slow cooker. Follow the same directions at outlined, but instead cook it in the slow cooker on low heat for 4-5 hours (or 3 hours on high).
- If you want a faster way to shred the chicken, simply put it in your KitchenAid mixing bowl with the paddle attachment and turn it on the 1st or 2nd speed for 2-3 minutes and TA-DA!! Completely shredded! It doesn’t get simpler than that.
