Breakfast time can be crazy, but I know if I don’t eat something that will fill me up, I’m going to regret it for the rest of the day.
These sandwiches are pretty easy to throw together especially if you’re just making them for one, but they are loaded with protein and nutrients to keep you full until at least your mid-morning snack.
We packed these sammies with egg whites, spinach, tomato, avocado, mozzarella cheese and – the ingredient that makes the whole sandwich go from “just okay” to “WOW” – tomatillo salsa. Just trust me on this one and don’t skip that last ingredient.
How to make an egg white patty
We don’t use pre-made egg whites in this recipe (although you’re totally welcome to in a pinch). You could also just scramble some egg whites and throw them on, but I’ve found an egg white patty transfers from my kitchen to the car best.
To make an egg white patty, whisk together two egg whites (or more if you prefer) and pour it into a small skillet. Mine was just big enough that when I folded my patty in half, it fit perfectly on my bagel thin.
Let the egg whites cook over medium heat until they turn opaque (about 3 minutes), before flipping them over with a spatula. Cook on the other side for about 3 minutes, until the egg whites are cooked all the way through and starting to turn slightly golden in places.
Everything Bagel Thins
We like to use bagel thins for these sandwiches (this isn’t sponsored, we just really like them!). They’re fewer calories and their “Everything” flavor is one of our favorites.
If you’re not a fan, you could also use a regular bagel (although your calories will increase), toasted bread (have you tried Dave’s Killer Bread? It’s one of our favorites!), or throw the ingredients in a bowl like a scramble and eat it with a fork for a low-carb option.
Protein and Nutrient Packed
While this takes a few more minutes to throw together than a bowl of cereal, the upside is that it’s made with ingredients that will keep you full all morning long.
Egg whites are a high-quality protein that will keep you fuller, longer and help keep your energy high.
Avocados are packed with vitamins and minerals (like potassium, folate, and vitamin K), plus they provide you with a great source of healthy fats.
Add in the spinach, tomato, and tomatillo salsa and you’ve got even more whole foods full of nutrients that you won’t regret eating by 10 am.

Egg White Breakfast Sandwich Recipe
Ingredients
- 4 bagel thins, (I used Everything Bagel Thins)
- 8 egg whites
- 1 cup spinach
- 1 tomato, sliced
- 1 avocado, sliced
- 4 sliced mozzarella cheese
- 4 Tablespoons tomatillo salsa
Instructions
- Toast bagel thins.
- In a small skillet over medium heat, cook egg whites (almost like you would cook a fried egg - I cooked them two egg whites at a time).
- Top the bottom half of each bagel thin with an equal amount of spinach, egg whites, tomato slices, avocado slices, mozzarella cheese, tomatillo salsa. Top with the other half of the bagel thin.
