We LOVE this Instant Pot chicken fajitas recipe. It quickly became a favorite family dinner recipe to make, especially during the week.
Not only is it absolutely delicious, it is a healthy Instant Pot recipe you can make that your family will love. There are a lot of pasta recipes for the Instant Pot, so this is a nice way to change it up.
Did I mention that is also a super easy chicken fajita recipe to follow? Because, it is! Even a beginner with the Instant Pot will not be intimidated by this amazing recipe.

Ingredients Needed For Our Instant Pot Chicken Fajitas:
- Boneless skinless chicken breasts
- Black beans
- Corn
- Petite diced tomatoes with green chilies
- Bell peppers
- Yellow onion
- Minced garlic
- Chili powder
- Ground cumin
- Paprika
- Salt
- Pepper
- Fresh lime juice
- Honey
How To Make Our Instant Pot Chicken Fajitas Recipe:
Grab out the Instant Pot and place your boneless skinless chicken breasts into the bottom of the inner pot.
Then, pour in the rinsed and drained black beans along with the undrained corn.
TIP: Be sure to not dump the fluid the corn is in as it will add flavor as well!
Now, add in the can of diced tomatoes with green chilies, sliced bell peppers, sliced onion, and the minced garlic.
Once all of that is in there and in the chili powder, ground cumin, paprika, salt, pepper, and fresh lime juice.
After almost everything is in there, add the honey into the Instant Pot right on top!
Place the lid on top of the Instant Pot and turn the knob to the SEALING position.
Then, press the PRESSURE COOK button and if you are using frozen chicken set the timer for 25 minutes, but if you are using thawed chicken, set the timer for 20 minutes.
After the timer goes off, turn the knob to the VENTING position and allow all of the pressure to escape out of the Instant Pot by doing a quick release.
Once that is done, serve it with all of your favorite toppings!

How to turn this into a freezer meal:
- Place chicken and all ingredients listed into a gallon-sized freezer bag. Place freezer bag into freezer and it will last up to 90 days.
- When ready to use, dump ingredients from bag into Instant Pot and add 1/3 cup of water in with the frozen food. Place the lid on top, move the valve to SEALING, and press the MANUAL button. Set timer for 25 minutes. Do a 5 minute NATURAL RELEASE when the timer is done. Serve on tortillas or on top of a salad.

Instant Pot Chicken Fajitas Recipe

Ingredients
- 2 pounds boneless, skinless chicken breasts
- 15 ounces canned black beans, drained and rinsed
- 15 ounces canned corn, (Do not drain)
- 14 ounces canned petite diced tomatoes with green chilies
- 3 bell peppers, sliced (1 red, 1 yellow and 1 green)
- 1 yellow onion, large, sliced
- 4 cloves garlic, minced
- 2½ teaspoons chili powder
- 2 teaspoons ground cumin
- 1 teaspoon paprika
- 1 teaspoon salt
- ¾ teaspoon pepper
- 2 Tablespoons fresh lime juice
- 1 Tablespoon honey

- Place chicken on the bottom of the instant pot.
- Add the rest of the ingredients in the order they are listed – putting the honey right on top.
- Put the lid on turning the knob to SEALING.
- If chicken is frozen, cook for 25 minutes.
