Make the best and easiest crispy fresh shrimp by following these easy instructions for our Air Fryer Coconut Shrimp made with simple ingredients that make amazingly scrumptious crispy air fryer coconut shrimp.
Even though this is called fried shrimp, it is a healthy coconut shrimp recipe that is made in the air fryer with less oil and less calories, but still plenty of flavor.
The best way to make this healthier version of large shrimp is in the air fryer, but it also creates juicy shrimp with a crunchy coconut coating that you will forget that you are eating at home and not your favorite restaurant appetizers.

- Flour: We use all-purpose flour, but almond flour would work great for a gluten-free option
- Salt: Kosher salt works perfectly
- Pepper: ground black pepper
- Coconut: Unsweetened shredded coconut that you can find in the baking eye
- Breading: Panko bread crumbs is a great healthy choice
- Eggs: Large whole eggs
- Water
- Shrimp: Use fresh raw shrimp, deveined and tail on (you can use tail on if you prefer), we prefer the jumbo shrimp.
- Cooking spray: Coconut cooking spray (regular non-stick cooking spray will also work)
- Dipping sauce: Thai sweet chili sauce is perfect for dipping the coated shrimp
How to make Air Fryer Coconut Shrimp:
- Set up your dredging station. In one bowl, whisk together the flour, salt, and pepper. In another bowl, whisk together the coconut and panko. In a third bowl, whisk together the eggs and water.
- Prep. Preheat the air fryer to 375°F and grease the basket with non-stick cooking spray (I like using coconut cooking spray for this recipe). Line a baking sheet with parchment paper.
- Bread the shrimp. One handful at a time, coat the shrimp in the flour mixture and then dip it in the egg mixture. Finally, coat the shrimp in the coconut mixture. Place breaded shrimp in a single layer on the prepared baking sheet. Repeat with the remaining shrimp.
- Air fry. Arrange the shrimp in a single layer in the basket of the preheated air fryer. Be careful not to crowd the basket. If you need to fry in batches, do so. Air fry for 5 minutes, flip, and air fry for another 5 minutes.
- Serve. Serve hot with sweet chili sauce.
Storing and other tips for Coconut Shrimp:
Fridge: Store this seafood dish in an airtight container and store it fridge for 4-5 days.
Reheating: To reheat this air fryer dish, place the shrimp back in the air fryer and air fry the leftover appetizer for 3-5 minutes at 350 degrees F or until they reach your desired temperature.
Make sure that the breaded shrimp is placed in an even single layer, making sure that none of the large shrimp overlap. This will make sure the shrimp cooks evenly.
When you are getting ready to cook the breaded shrimp, you will only need to use a cooking spray. No need to pour any oil into the air fryer to ensure you get the perfect crispy shrimp.
