I tried this chicken a long time ago when my sweet neighbor made it. I was in LOVE with the taste, but I forgot to get the recipe from her when I moved! I finally combined a few of our recipes together and came up with this almond chicken, which is as close as I could get! I just love how easy it is, and the almonds add the perfect crunch to the crust!
Almond Crusted Chicken Recipe

- 1 cup bread crumbs
- 1 ½ cups sliced almonds
- salt and pepper, to taste
- 3 eggs, beaten
- 6 boneless skinless chicken breasts
- ⅓ cup butter

- Preheat oven to 375 degrees.
- In a small bowl, mix together bread crumbs, almonds, and salt and pepper.
- Take each piece of chicken and dip it in the beaten eggs, and then dredge it through the almond mixture, coating each piece completely.
- Place each coated chicken breast in a 9 x 13 inch pan.
- Cut the butter up into small pieces and put them over the top of the chicken breasts.
- Bake for 30 minutes, or until the chicken reaches an internal temperature of 165 degrees.
