Sometimes eating healthy can feel a little repetitive. Here’s a new healthy side dish to mix it up a little bit.
Probably one of the easiest recipes I have ever made, and probably not healthy since I ate enough for a whole family.
Nothing beats a delicious AND healthy side to some of these great meals we’ve been sharing this month.
These are inexpensive to make, and are full of amazing flavor. You are going to love how simple and delicious these are to make.
You could also add any of your favorite cheese combinations, if you don’t prefer the parmesan.
If you have never baked a tomato before, you need to. They have an amazing sweetness to them, and only take a few minutes to bake.
what could i use instead of tomatoes?
I am a huge tomato lover, but my husband is not a fan. When I make this recipe, I usually have to switch out the tomato for a vegetable he will actually eat.
He likes when I make this recipe with:
-Thin russet potato slices
-Asparagus slices
-Chopped broccoli
-Zucchini slices
-Baby carrots (these may take longer to bake)
-Radishes
-Squash
You could really use any of your favorite vegetables with this recipe. You may need to adjust the cook time, to ensure they soften, but we highly recommend baking them.
They add a different taste and texture, that you are going to love. They are also delicious with a little parmesan cheese on them.
However, you could use any cheese you desire on your vegetables.

Baked Parmesan Tomatoes Recipe
Ingredients
- 2 tomatoes
- ½ cup parmesan cheese
- 1 teaspoon fresh oregano
- 1 Tablespoon olive oil
- salt and pepper, to taste
Instructions
- Preheat oven to 425 degrees F.
- Wash tomatoes and slice in half horizontally.
- If that is too thick for your liking, you can cut out some of the tomato from the center to make the ends thinner.
- Place tomatoes open ends up on a baking sheet.
- Sprinkle cheese and oregano over the tomatoes.
- Drizzle with olive oil and top with salt and pepper.
- Bake for 10 minutes.
- Best if served immediately.
