This balsamic bruschetta is one of my FAVORITE appetizers. It was featured in this year’s “Day after Thanksgiving” Costco cookbook.
With the fresh basil, tomatoes, onions, and the balsamic vinegar, it is absolutely delicious.
I make this for birthday get togethers, Thanksgiving appetizers, Christmas dinner and parties, New Years Eve, and every game day or friend and family game night.
We pretty much make this Balsamic Bruschetta all the time. And nobody ever seems to complain about it. In fact, everyone is always raving about it, and asking for the recipe.
If you are looking for a quick and light appetizer, this is definitely a recipe you need to try. I promise you will not regret it.
what else could I dip in my Bruschetta?
I love dipping bread into my bruschetta, but my husband hates the texture of croutons, or any crunchy bread that can get stuck in his teeth.
Must be a texture thing, but I am not sure. I love all carbs, so I don’t complain.
If you are looking for a quick and delicious alternative, here is what we recommend:
-Crackers
-Pretzels
-Cheese slices
-Tortilla slices
-Rice cakes
-Ranch Doritos or any other favorite chip
-Pita bread or crackers
-Soft bread or rolls
If you have a lot of Bruschetta leftover, you can also use it as a topping on tacos, burritos, salad, chicken, pizza, or any other favorites, that need a little taste of tomato.

BALSAMIC BRUSCHETTA RECIPE
Ingredients
- 1 baguette, sliced 1/2" to 3/4" thick
- 2 Tablespoons butter, melted
- ¼ teaspoon garlic powder
- 8 roma tomatoes, seeded and chopped
- ⅓ cup fresh basil, chopped
- ½ cup parmesan cheese
- 1 clove garlic, minced
- ¼ cup sweet onion, finely diced
- 1 Tablespoon balsamic vinegar
- 1 teaspoon extra virgin olive oil
- salt and pepper, to taste
Instructions
- Preheat oven to 350°F.
- Line a baking sheet with foil and arrange baguette slices on the sheet.
- Stir together butter and garlic powder. Lightly brush garlic butter over baguette slices. Bake 10 minutes, or until edges are golden.
- In a medium bowl, mix together tomatoes, basil, Parmesan, garlic and onion.
- Toss with balsamic vinegar and olive oil, adding salt and pepper to taste.
- Serve immediately with baguette slices.
