For our BBQ chicken salad sandwiches recipe, I love to eat these sandwiches using hamburger buns, but you can also use your favorite buns or rolls. Either way it is going to be super delicious and refreshing
It is a great recipe that you can make for your next get together as it is super easy to make and can feed a good amount of people. You can also double the recipe depending on how many people will be eating, or save some for leftovers for the next day. This pulled chicken salad mix is also super tasty on a fresh bed of spring lettuce or spinach if you want to forego the bun completely.
Another nice thing is that you do not have to make all of the ingredients for the shredded chicken sandwich at the same time. Sometimes I like to prepare the shredded chicken the day or night ahead so that way I can cut out the waiting time for the chicken to cook and cool down.
You can serve these tasty pulled chicken sandwiches with some of our oven baked seasoned steak fries, baked zucchini fries (if you want to be on the healthier side) or even some delicious baked mozzarella cheese sticks!
Ingredients You Need to For This BBQ Chicken Salad Sandwiches Recipe:
- Boneless, skinless, chicken breasts
- Chicken broth
- BBQ sauce
- Mayonnaise
- Onion, finely chopped
- Celery
- Salt
- Crushed red pepper flakes
- Hamburger buns or rolls
- Tomato slices (optional)
- Lettuce (optional)
How To Make This BBQ Chicken Salad Sandwiches Recipe:
To start making this delicious recipe, begin by placing the chicken breasts into the bottom of the inner pot of the Instant Pot.
After adding the chicken to the Instant Pot, pour in the chicken broth over top of the chicken breasts.
Then place the lid on the Instant Pot and make sure the valve is in the SEALING position.
Once the lid is all set, press the PRESSURE COOK or MANUAL button and set the timer for 18 minutes.
When the timer is done, move the valve to the VENTING position and do a quick release of the pressure inside the Instant Pot.
After all of the pressure has been released and the pin drops down, remove the lid and take the chicken out of the Instant Pot and shred it with two forks.
Next, place the shredded chicken in a large mixing bowl along with the BBQ sauce and then mix it all together.
Cover the bowl and place it in the fridge to allow the chicken to cool down.
When the chicken is cool, add in the mayonnaise, chopped onion, chopped celery, salt, and pepper flakes to the bowl and then mix it all together.
Now just serve the chicken salad on your bun and top it with some tomatoes and lettuce and any of your other favorite toppings and enjoy!

BBQ Chicken Salad Sandwiches Recipe
Ingredients
- 1½ pounds boneless, skinless chicken breasts
- 1 cup chicken broth
- ½ cup BBQ Sauce
- 1 cup mayonnaise
- ½ cup onion, finely chopped
- ½ cup celery
- ¼ teaspoon salt
- ¼ teaspoon crushed red pepper flakes
- 8 hamburger buns, or rolls of choice
- tomato slices, optional topping
- lettuce leaves, optional topping
Instructions
- Place chicken breasts in bottom of Instant Pot. Add in chicken broth.
- Place lid on top of Instant Pot, move valve to SEALING, and press PRESSURE COOK button (or MANUAL button). Set timer for 18 minutes.
- When timer is finished, move valve to VENTING and do a quick release of the pressure.
- Remove chicken and shred using 2 forks. Place shredded chicken in a large mixing bowl and toss with BBQ sauce.
- Cover bowl with plastic wrap and refrigerate until chicken is cooled.
- Add mayonnaise, onion, celery, salt and pepper flakes to chopped chicken; mix together. Serve on buns or rolls with tomato and lettuce.
