So I’m pregnant with my 4th baby, which is still so crazy to me. The last 13 weeks have been rough.
All I wanted was cheese and bread. These BLT grilled cheese sandwiches hit just the right spot. My kids didn’t love the lettuce in BLT but my husband liked them a lot.
I also love adding a lot of spinach because the other flavors take over, and I can’t even taste it.
I highly recommend this recipe for busy nights, when you don’t have a lot of time for dinner, or you hardly have any ingredients in your fridge.
You can add any ingredients you want, or even more vegetables, if you are looking to make it more healthy.
What cheese would be good on this grilled cheese?
It is all about the cheese. I put cheese on my cheese. If you are looking for the best flavor, you have to be sure you have extra cheese on your grilled cheese.
Here are a few of our cheese favorites:
-Cheddar Cheese
-Provolone Cheese
-Swiss Cheese
-Pepper Jack Cheese
-Mozzarella Cheese
-Colby Jack Cheese
Or really any combination of any of these cheeses would be delicious on this sandwich.
What other sauce could I add to these grilled cheese sandwiches?
I love sauce. My husband and I put sauce on our sauce. I hate dry food more than anything, so if I can put extra sauce on something, you bet I do.
One of our new favorite is combining plain Greek yogurt with Fiesta Ranch Seasoning Mix. It’s seriously only two ingredients (and healthy, so you can sauce the crap out of your quesadilla) and so easy.
I spread this on my bread before adding any of the other ingredients in the instructions, and it is delicious.
You are going to love it.
I use about 1 tablespoon of the mix, to 1/2 cup of the plain Greek yogurt.
I use this on burritos, enchiladas, sandwiches, chip dip, etc. Literally it is my new ketchup. It goes with just about anything you want it to.

BLT Grilled Cheese Recipe
Ingredients
- 4 strips bacon, thick cut
- 4 slices sourdough bread
- 1 Tablespoon butter
- 4 teaspoons Dijon mustard , divided
- 1 tomato, sliced
- 2 ounces cheddar cheese, sliced
- ½ cup lettuce, shredded - divided

Instructions
- Heat a large skillet over medium low. To make each sandwich, spread one side of a bread slice with butter. Spread the other side of the buttered slice with 1/2 teaspoon of Dijon mustard.
- Layer on half of the cheese, 2 strips of cooked bacon, tomato slices, and a small handful of lettuce. Spread another slice of bread with Dijon mustard, then place it mustard-side down on top of the lettuce. Butter the remaining topside of the bread. Repeat for the second sandwich.
- Once the skillet is warmed up, cook the sandwiches on each side, until the bread is golden and the cheese melted, about 3 to 5 minutes per side.
- Keep it on low and it will melt your cheese perfectly.
