Peach Season is about here, which means it’s time to get creative with all these peaches before they go bad, because not one single peach should EVER go to waste.
So what better way to eat peaches for every meal? Well we at least have breakfast covered with this amazingly easy and delicious Blueberry Peach Breakfast Pastry.
It takes minutes to through together and bake, and it will change your life. If you have never tried the blueberry and peach combination, you need to stop what you are doing, and try it right now. It is so delicious, and by far, my favorite fruit combination.
what other fruit could i make this recipe with?
I love blueberries and peaches together, but I get they aren’t always a crowd favorite. If you are looking to switch up the fruit in this recipe, it’s an easy fix.
Here are a few other fruits we recommend trying:
- Strawberries
- Blackberries
- Peaches (without the blueberries. You could also remove the peel)
- Apple Pie Filling
- Cherries (or cherry pie filling)
- Raspberries
You could also do a combination of fruits. I have made this with blueberries, blackberries, strawberries, and raspberries, and it was absolutely delicious.
Add a hint of lemon:
I love this recipe, and adding just the slightest hint of lemon to the icing mixture. It’s super simple and a delicious way to mix things up.
All I do, is add half a lemon (just the juice of it), to the icing mixture, and drizzle it over the pastry. It’s simple, quick, and full of flavor.
It adds just the perfect amount of flavor to it. You could also add poppy seeds to it, to give it that flavor, texture, and look.
If you don’t have lemons, you could also use a drop of lemon extract. A little goes a long way, so start off with just a tiny bit, and add more as needed.

This recipe is a simple one. It’s also a delicious one. It only requires a few simple ingredients, and let me tell you, it tastes like you slaved away on this one.
All the textures and flavors pair perfectly.
Although this recipe says it’s a breakfast pastry, it could honestly be a dessert. The fruit makes it so sweet and flavorful, you just can’t go wrong with this one.
This is all it takes to throw the base of this recipe together. We will make the glaze a little later on, but for the main pastry, all you need is an egg, blueberries, peaches, cinnamon, and of course puff pastry dough.
Crescent or even pizza dough would work, but the puff pastry dough it the best with this recipe. But if your store doesn’t have it, any of the other options will work out.
A key to making this recipe perfectly is spraying the pan with nonstick cooking spray. If you don’t, you may be sorry. This is a sticky dough and will cook quickly and possibly burn to your pan, unless you take care of the problem ahead of time.
Roll out your dough on the pan. You don’t need to use a rolling pin, I just unrolled mine from the package it was in.
Create your cinnamon and egg wash, by whisking the two together until fully combined. Using a basting brush, evenly spread the mixture out on the pastry.
You can remove the skin off your peaches, but it really doesn’t bother me. Especially once you cook the pastry, you won’t be able to tell there is skin, because it is so soft.
Place your peach slices on the pastry. Fill in the other areas with blueberries.
I love the fresh fall colors of this recipe. I also love the fresh fruits on this pastry. You can also top it off with a little sugar to make it sweeter as well.
Bake it in the oven. Once the edges begin turning golden, you know the pastry is done cooking, so it is safe to remove. This usually takes about 15 minutes to cook.
Once it comes out of the oven, you will want to pour the glaze over the pastry immediately, allowing the delicious sweet flavor to seep into the pastry.
Cut the pastry into squares, and serve. This recipe is absolutely delicious and the perfect way to wake up on a crisp fall morning. You can also top it off with a dollop of whipped cream (or ice cream if you serve it as a dessert), but I prefer it as is.
would this recipe work with frozen fruit?
We do not recommend using frozen fruit for this recipe. Once the fruit thaws, it has a lot of extra juice and liquid to it. Once you cook the pastry, it will be very liquidy and runny, so your pastry will be soggy. We only recommend using fresh fruit for this recipe.

Blueberry Peach Breakfast Pastry Recipe
Ingredients
- 1 sheet puff pastry
- 1 large egg
- ½ teaspoon cinnamon
- 4 fresh peaches, pitted and sliced into thin pieces
- 2 cups fresh blueberries
- ⅓ cup sugar
Glaze:
- 1½ cups powdered sugar
- 2 teaspoons vanilla extract
- 2 Tablespoons milk
Instructions
- Preheat oven to 350 degrees.
- Spray cookie sheet with nonstick cooking spray.
- Spread out puff pastry dough.
- In a bowl whisk together the cinnamon and egg until fully combined, and spoon the cinnamon egg mixture over the dough until evenly distributed.
- Layer the blueberries and peaches on the egg covered dough.
- Sprinkle the sugar over the entire pastry.
- Place in oven and cook for 15 minutes or until edges get light golden brown.
- While the pastry cooks, combine in a small bowl the powdered sugar, vanilla extract and milk until fully mixed and smooth.
- Drizzle the icing over the warm pastry when it comes out of the oven and serve immediately.
