This Easy Breakfast Tacos Recipe is absolutely amazing and so easy to make, with some simple ingredients they’ll become one of your favorite breakfast recipes!
These egg tacos are perfect for on the go, they are similar to a breakfast burrito and so easy to individually customize for the whole family!
They are a delicious way to get plenty of protein into your morning meal.
Ingredients needed to make Breakfast Tacos:
- Red Potatoes
- Green Bell Pepper
- Olive Oil
- Eggs
- Bacon
- Milk
- Shredded Cheddar Cheese
- Refried Beans
- Flour Tortillas or Corn Tortillas
- Salt and Pepper
How to make Breakfast Tacos:
- Dice potatoes and pepper
- In a medium nonstick skillet over medium heat, cook the diced potatoes and peppers in the olive oil until completely cooked through and potatoes are soft.
- In a separate large skillet whisk together milk and eggs and scramble the egg mixture over medium-high heat in pan until done.
- Spread refried beans in center of each tortilla.
- Top with fluffy eggs, potatoes and peppers, cheese, and bacon.
- Fold warm tortillas in half forming tacos. Serve warm.
Tips for these delicious Breakfast Tacos:
Not a fan of crispy bacon? You can easily substitute breakfast sausage.
Try cubed breakfast potatoes (hash browns) in place of red potatoes.
Refrigerate assembled tacos in airtight containers for up to 2 days. Store any toppings separately. To Reheat. Rewarm leftovers in a skillet on the stovetop over medium-low heat or in the microwave.
To freeze, place tacos wrapped in foil, in an airtight container or bag. To reheat, place the wrapped frozen tacos in the oven at 350 degrees for about 20 minutes, then turn the oven to warm. Alternatively, you can heat them one or two at a time in the microwave – remove the foil first, and wrap in a damp paper towel for even heating for about 2 minutes on high per taco.
