My husband is a huge football fan, as well as a buffalo sauce fan. Combine the two, and he is on cloud nine.
I personally think it’s a little hot, so I always reach for the mild sauce, but all the flavor is still there, and it still has the perfect amount of kick.
These Buffalo Chicken Meatballs are so easy to make and full of buffalo flavor, without a ton of kick.
Of course you can up the kick, and add a little more heat to them, but I prefer to keep it mild and enjoy the flavor.
These are so easy to make, come together in a matter of minutes, and are also very healthy. It’s a win win win.
hot to make buffalo Chicken Meatballs:
Step 1: Combine all the ingredients in a bowl, reserving a little bit of the buffalo sauce, for basting afterwards.
Step 2: Roll the meat into one inch balls, and place on a covered baking sheet. They don’t really grow or flatten, so it’s okay if they are really close to each other.
I wouldn’t recommend to have them touching, but very close is okay.
Step 3: Place in preheated oven and bake until cooked all the way through. After they are done baking, baste them with the leftover Buffalo Sauce.
This should just be a thin layer. It just gives it a little extra kick and flavor.
Step 4: Garnish with ranch and a few extra green onions if desired. These make a great appetizer, but you could also eat them for dinner. They are delicious.
could i make this recipe using beef or turkey?
This recipe originally calls for chicken. I think it takes on the taste of the buffalo sauce a little better, than other meats, however, you could easily use a different kind of ground meat.
We also recommend using a ground turkey, because it has a lighter taste like chicken, and better takes on the buffalo sauce flavor.
However, you could also use beef, and they would still be delicious. Maybe just add a second layer of basting, to give it a stronger buffalo sauce taste.

Buffalo Chicken Meatballs Recipe
Ingredients
- 1½ pounds ground chicken
- 1 Tablespoon dry ranch salad dressing mix
- 5 green onions, diced
- 1 cup dry breadcrumbs
- 1 egg
- ¾ cup buffalo sauce, (reserve 2 Tablespoons for after baking)
- ½ teaspoon paprika
- 1 teaspoon garlic salt
- ½ teaspoon pepper
- 1 teaspoon Worcestershire sauce
Instructions
- Preheat oven to 350 degrees.
- In a bowl, combine your ground chicken, ranch mix, green onions, bread crumbs, egg, buffalo sauce, paprika, garlic salt, black pepper, and Worcestershire sauce, until fully incorporated.
- Roll your meat mixture into one inch balls and place on a foil lined cookie sheet.
- Place the sheet in the oven and bake for 25 minutes or until fully cooked through.
- Remove from oven and using a basting brush, brush another fresh layer of buffalo sauce, over each meatball.
- Garnish with a drizzle of ranch and extra green onions if desired.
