It’s been a little bit since we’ve obsessed about our cake mix cookie recipe that is to die for, aka our grasshopper sandwich cookies.
These chocolate mint cookies are so good! Plus since they are cake mix cookies, they are also ridiculously simple to put together. No need for a long list of ingredients either.
Grasshopper cookie sandwiches are also a fun thing to make with your kids. Just make the cookie patties up and give them the green frosting and let them have at it!

To make Grasshopper Sandwich Cookies, you will need the following ingredients:

- Devil’s food cake mix
- Eggs
- Vegetable, butter, or original shortening
Frosting Ingredients
- Butter
- Milk
- Powdered sugar
- Peppermint extract
- Green food coloring

How To Make Grasshopper Sandwich Cookies Recipe
- Preheat oven to 350 ℉.
- Mix together cake mix, eggs and shortening until well combined. The dough will be pretty thick.
- Roll dough into 1-inch balls, making sure they are all similar in size.
- Place dough onto ungreased cookie sheet and bake for 8 minutes.
- Immediately transfer cookies to a cooking rack.
- To make the frosting, mix together butter, milk, powdered sugar, peppermint extract and as much green food coloring as desired (I used 8 drops) until smooth.
- Spread onto cooled cookies and sandwich together.
Storage Suggestions
If you manage to not eat the whole tray of cookies immediately, these Grasshopper Sandwich Cookies store well. Once cookies have completely cooled, here is how you can store them:
- Counter: Store in an airtight container in a single layer for up to 4 days at room temperature. If you want to try and get the cookies to last even longer without becoming crumbly cookies, add a slice of bread into the container of cookies. The bread will give the cookies something to draw moisture from.
- Refrigerator: Store in an airtight container in a single layer for up to 7 days in a refrigerator.
- Freezer: You can freeze precooked cookie dough for cookies later. Just roll out and freeze for 30 minutes, and then transfer to an airtight, freezer safe bag for up to 3 months. To store cooked cookies, let them cool completely before you put them in a freezer-safe bag for up to 3 months.
