Ground beef, (almost like a burger patty), creamy sauce and melted cheese – all in a taco shape. Talk about one of the best kid-friendly, delicious meals you’ve had in a while!
Recipe Ingredients
For the tacos
- Oil: you can use either olive oil or avocado oil for the best results
- Onion: dice up a yellow onion
- Protein: use lean ground beef or lean ground turkey
- Seasoning: you will need to have salt, ground black pepper, garlic powder
- Sauces: we like to use ketchup and yellow mustard to make the burger sauce
- Shells: you will want to use the stand-and-stuff hard taco shells you can find in the grocery store
- Cheese: use either shredded cheddar cheese or your favorite cheese
Toppings
- Shredded lettuce
- Roma tomatoes, diced
- Pickled onions
- Pickles
- Secret Sauce
How To Make Cheeseburger Tacos
- Prep. Preheat the oven to 415°F and line a 9X13” baking pan with parchment paper.
- Saute. Heat the olive oil over medium-high heat in a heavy-bottomed skillet. Add the onion and saute until translucent.
- Brown the beef. Add the ground beef to the skillet, season with salt, pepper, and garlic powder, and cook until the meat is nicely caramelized and cooked through, crumbling it with a wooden spoon as you go.
- Add some cheeseburger flavor. Stir in the ketchup and mustard and turn off the heat.
- Assemble. Stand the taco shells up in the baking dish and fill each with ~ ¼ cup of the meat mixture. Distribute the cheddar cheese evenly between the tacos.
- Bake. Bake for 10 minutes or until the cheese has melted.
- Top. Remove the tacos from the oven and top with your favorite toppings. We love loading ours with shredded lettuce, diced tomatoes, pickled onions, pickles, and/or our famous secret sauce.

No need to overthink this part of the recipe. We like to use 85/15 or 90/10 ground beef. Normally you would use burger patties for normal smash burgers, instead, you’ll cook the ground meat (either ground beef or ground turkey) in a cast iron skillet, breaking it up to create the meat for the thin layer of ground beef in the tacos.
The kind of cheese you use is based on what you like most. I tend to like using shredded cheddar cheese because it melts well with the meat side of the taco, but any of these will do:
Cheddar cheese slices
Sliced American cheese
Pepper jack cheese slices
Provolone cheese slices
If you and your family prefer to use a soft shell, that is perfectly fine. Just replace the hard shell with a soft shell and fill as best you can. The nice part about the hard shell is that it sits up while you fill it with all the delicious toppings.
Storing Instructions:
Fridge: This recipe will taste just as great the next day. Just store each of the meat, cheese, and toppings in separate airtight containers for up to 4 days and then assemble your cheeseburger tacos when you are ready to eat them next time!
