This Cheesy Chicken Broccoli Rice Casserole Recipe (no soup) is a wonderfully healthy chicken broccoli and rice casserole that you might find yourself making it often throughout the month.
What do we mean when we say chicken broccoli rice casserole no soup. We mean you will be making an easy base that will replace your normal condensed soup used in casseroles.
Not only does that make this a healthy chicken broccoli rice casserole but its still a super easy casserole to make.

Ingredients You Need to Make Our Cheesy Chicken Broccoli Rice Casserole Recipe (No Soup):
Ingredients:
- Unsalted butter
- Cloves garlic, minced
- Flour
- Garlic powder
- Salt
- Ground black pepper
- Chicken broth
- Shredded sharp cheddar cheese, divided
- Cooked rice (white or brown will work)
- Cooked and shredded chicken breast
- Frozen broccoli pieces, cooked according to package
- Fresh parsley, chopped (optional garnish)
How To Make Our Cheesy Chicken Broccoli Rice Casserole Recipe (No Soup):
When you are ready to start, begin by preheating the oven to 350 degrees.
Then spray a 9×13″ baking dish with non-stick cooking spray and set aside.
Now, in a large skillet, melt butter over medium high heat. After the butter is melted, stir in the garlic and cook for 30 seconds.
Once the garlic is fragrant, add in the flour, garlic powder, salt, and pepper and mix everything together using a whisk.
Next, pour in the chicken broth, making sure to whisk constantly, until the sauce begins to boil and thicken.
Then, stir in 2 1/2 cups shredded cheese until it is melted and smooth.
After the cheese is melted, add in the cooked rice, cooked chicken, and cooked broccoli, and gently fold it all together.
When that is all combined, carefully dump the chicken broccoli rice mixture into the prepared pan and spread it out.
Then simply top the broccoli chicken mix with the remaining 1 cup of cheese and fresh parsley, if you are planning to use it.
Place the pan in the oven and bake it for 20 minutes or until the cheese is melted.
To Make This Cheesy Chicken Broccoli Rice Casserole Easy You Will Need:
- 9×13 inch baking dish
- Nonstick cooking spray
- Large skillet
- Whisk (THIS is a great set!)
- Spatula
Does the rice need to be made up in advance?
When you are making this recipe, yes it is a good idea to have it made up in advance or cook it while you are making the cheesy base for the casserole.
You can also make the rice in the Instant Pot and save yourself some time when you need to make it.
But for this recipe your rice and chicken definitely needs to be cooked before it is combined with everything and put in the oven.

Cheesy Chicken Broccoli Rice Casserole Recipe (No Soup)
Ingredients
- ¼ cup unsalted butter
- 5 cloves of garlic, minced
- ¼ cup flour
- ½ teaspoon garlic powder
- ½ teaspoon salt
- 1 teaspoon ground black pepper
- 2¼ cups chicken broth
- 3½ cups shredded sharp cheddar cheese, divided
- 3 cups cooked rice, (white or brown will work)
- 2 cups cooked and shredded chicken breast
- 12 ounces frozen broccoli pieces, (1 bag) cooked according to package
- fresh parsley, chopped, (optional garnish)
Instructions
- Preheat oven to 350 degrees.
- Spray a 9×13" baking dish with non-stick cooking spray and set aside.
