How to Make Chicken Taco Roll-Ups
- In a bowl, mix together, the shredded chicken, cream cheese, Mexican cheese, salsa, and onions with a hand mixer.
- Add the diced avocado, taco seasoning, and garlic, garlic salt, salt and pepper, and mix at a slow speed.
- Spread a thin layer over a tortilla and roll the tortilla up.
- Cut into 1 inch bites.
- Refrigerate until ready to serve.

If you want to make this recipe healthier, you can try the following modifications:
- Use wheat or spinach tortillas instead of flour tortillas.
- Instead of cream cheese, use plain Greek yogurt. Your filling will be more runny, so you can add more chicken. Other alternatives to cream cheese, include low-fat cream cheese, or using half cream cheese and half plain Greek ygourt.
- Add more vegetables – celery, small carrot shreds, zucchinis, red peppers, spinach, or arugula.
