What we mean by softened butter:
This recipe calls for softened butter, which is exactly what we mean. We do not mean partially melted, or butter that is cold.
This recipe will only work with softened butter. By softened butter, we mean room temperature butter. This is definitely a frosting recipe you will want to prepare ahead of time because you will want to soften your butter, and set it out, to allow it to thaw and get soft, to room temperature.
You could use margarin for this recipe, but we have found that it works best when you use butter.
We do not recommend softening the butter, by melting it in the microwave. This will create melted butter (even the slightest bit of liquid butter, will effect your frosting).
If you have any liquid butter, or melted butter, your frosting will be extremely runny, and you will have to add more powdered sugar or cocoa, which will greatly effect the texture and flavor.
I usually set my butter out over night, then prepare the frosting in the morning, when the butter is at room temperature.

Chocolate Buttercream Frosting Recipe
Ingredients
- ½ cup butter, softened
- 2 ⅔ cups powdered sugar
- ⅓ cup whipping cream, or milk
- 1 ½ teaspoons vanilla
- ½ cup cocoa powder

- Cream the butter in a small bowl. Blend in the cocoa powder, vanilla, confectioners sugar, alternately with the cream. Beat with an electric mixer, until the desired texture is achieved.
