what could i use instead of chocolate pudding?
This recipe calls for chocolate pudding, however, if you are not a chocolate pudding lover, this is an ingredient that can easily be replaced.
Here are a few chocolate replacements that would be just as delicious:
-Nutella
-Chocolate Chips (you could also melt them)
-Chocolate Syrup
-Hot Fudge (If you want to make your own, check out our Easy Homemade Fudge Recipe)
-Chocolate Butter Cream Frosting (check out our homemade frosting recipe, here)
could i make these with wheat or coconut flour?
Crepes can be tricky to make, because they need a certain consistency. Although most flour has the same consistency, crepe batter is a little unique.
We have only made crepes using all purpose flour, but you could easily try a different flour, but we recommend all purpose.
When making crepes, you will want to be sure your batter has no lumps and has a steady and thick stream, when you pour out a spoonful of it.
You don’t want it chunky, or too runny, but a thick and smooth consistency.
Pan cake batter is a lot thicker than crepe batter. You want crepe batter to be smoother and a more fluid consistency.

Chocolate Raspberry Crepes Recipe
Ingredients
- 1 cup flour
- 2 eggs
- ½ cup lowfat milk
- ½ cup water
- ¼ teaspoon salt
- 2 Tablespoons melted butter
Filling
- 1 box instant chocolate pudding mix
- 2 cups milk
- ½ cup frozen raspberries
- 1 can whipped cream
Instructions
- Heat frying pan on medium heat.
- Whisk flour, eggs, water and milk together in a large mixing bowl.
- Add salt and butter.
- Continue mixing until the lumps have disappeared.
- Spray a small amount of non-stick cooking spray onto pan.
- Next drop 1/4 cup of mixture onto the heated pan.
- Right after mixture is poured on, pick up the pan quickly and tilt in a circular motion.
- You want the mixture as thin as possible and to cover the whole pan.
- Cook for about 2 minutes on the first side - flip - then 1 minute on the second side.
- Remove from pan and place about 2 tablespoons of pudding onto the crepe in a line down the middle.
- Spray desired amount of whip cream on top of the chocolate and stick in a few raspberries.
Fold or roll and enjoy!
