It’s the most wonderful time of the year: BACK TO SCHOOL.
I love summer and everything that it brings, but by the end, I am ready to be back on a schedule, have an earlier bedtime, and separate my kids so that the fighting can stop.
To kick off this school year, my goal is to have some different breakfast options besides just cold cereal.
For the past few weeks, whenever I made pancakes or waffles, I will double the recipe and then freeze the extras for a busy school morning.
We made this recipe the other day and the kids scarfed them down. The cinnamon flavor is perfect and one of my kids just ate it plain because she didn’t think it needed syrup.
So tomorrow before I send them out the door for their first day, I will fill them up with these pancakes.
They are delicious, easy, and I love having them made in advance, for later on throughout the week.

how can i make these pancakes more healthy?
We are trying to teach our kids the importance of eating healthy, so they can grow big and strong. It’s a little tricky to explain that pancakes can be healthy when they taste so good, but healthy food can be delicious.
We love making pancakes, and sending our kids to school with full bellies, but there are some healthier alternatives.
Here are a few of our favorite healthy hacks, when it comes to making pancakes or waffles:
Here’s what we suggest:
- using whole wheat flour instead of all-purpose flour
- using low-fat or skim milk
- using almond or soy milk
- using Greek yogurt in place of butter or oil
- add in some fruit (we love blueberries, strawberries and bananas)
- using 2 egg whites in place of 1 large egg
