Confession: Sometimes when I drop my husband off at work in the mornings, I stop and get myself a country breakfast burrito from Taco Time.
Maybe it’s just laziness, but they just taste SO good. There’s just something about the combination of tater-tots and country gravy.
I figured if the combo tastes great in a tortilla, I bet it would taste great as a hot breakfast casserole. I was right. This breakfast casserole is great for brinner, brunch, or any meal in between.
We love it any time of day, and it’s the perfect dinner for those crazy weeknights when you feel like each kid has seven different actives every single day.
This meal is a winner, and everyone in the family will love it.
could i make this the night before, then cook it in the morning?
I love this recipe, because you can make it ahead of time. It makes it perfect for holidays when you know the mornings are going to be a little crazy.
You can make it the night before then throw it in the oven when you wake up. It’s quick, simple, and delicious.
We don’t, however, recommend making it more than 15 hours, before baking it. The ingredients can get a little soggy, and it wouldn’t be ideal.
If you plan to make it for dinner, we recommend making it in the morning then cooking it at night, but we don’t recommend making it the night before, then serving it the next evening.
For the best results and the best texture and flavor, we recommend making and baking within 15 hours.

The thing I love about this recipe, is how versatile it is. You could easily throw in some vegetables or omelet mix ins, and it would taste absolutely delicious. Here are a few I recommend adding to the mix:

Country Breakfast Casserole Recipe
Ingredients
- 16 ounces sausage, 1 package
- 1 chopped green onion
- 2 cups shredded cheddar cheese
- 6 eggs, lightly beaten
- 1 cup water
- ½ cup milk
- 2 cups frozen tater tots
- 2.64 ounces country gravy mix, 1 packet
- 6 slices of bread, cubed
- 2 Tablespoons butter
Instructions
- Preheat oven to 325 degrees F.
- Grease a 13x9 inch pan.
- Brown sausage in skillet and drain the fat. Combine sausage and green onion, and spread across the bottom.
- Top with shredded cheese.
- Mix together eggs, milk, water, and gravy mix and pour evenly over the pan.
- Arrange bread cubes and tater tots on top and drizzle melted butter over everything.
