Does anyone else get stuck in a lunch rut? I get sick of eating salads everyday pretty fast! If I don’t have something healthy ready to go or easily accessible, I usually go straight for a PB&J!
Tuna is something we usually keep on hand, and with a few other ingredients I found in my pantry and fridge, this Craisin Walnut Tuna Salad was born!
Serving these over apple slices add an extra delicious crunch, but you can eat this tuna salad with crackers or even on a sandwich!
could i use chicken instead of tuna?
You’ll love how versatile this recipe is! I know tuna is an acquired flavor for some, so chicken is totally acceptable. Canned or shredded chicken works great.
If you do decide to use chicken, save yourself tons of time by using a rotisserie chicken instead of cooking and chopping your own! Most grocery store delis will sell freshly packaged rotisserie chicken pulled off the bone.
If your local deli does not sell pulled rotisserie chicken, you can also buy a whole chicken and freeze what you don’t use for another time.
You could also use shredded turkey for this recipe. I personally prefer the tuna or chicken, but any would be delicious.
what could I replace the mayo with?
This recipes does call for mayonnaise, but we know that’s not always everyone’s first choice. Another great option for your tuna salad is Greek yogurt!
Plain Greek yogurt is full of protein and adds a great flavor to your tuna salad!
Light mayonnaise will also work! Just keep in mind either of these options will slightly alter the taste of the recipe.
