I’m going to be honest, sometimes I just get sick of eating the same old veggies all of the time.
My goal is to eat 3 vegetables everyday and that can get tricky sometimes.
This vegetable stir fry is so easy to make, you eat a ton of veggies, and it tastes delicious. It’s a great way to sneak vegetables into your kids diet, or introduce your kids to new ones.
You could easily sneak in any vegetable to this dish, and make it your own, according to what your family likes and prefers.
Once you put the sauce on, it will all taste delicious; they won’t even know what they are eating.
Uneven cooking?
It’s annoying when you have a stir fry with veggies that aren’t cooked evenly. The truth is, some vegetables cook faster than others. Take that into account.
Try adding the hard veggies like broccoli, cauliflower, celery, and carrots first. Then, add the peppers, onions, zucchini, and other vegetables that cook faster a few minutes later.
Perfect prepping for a quick and easy dinner:
We all have nights when we just need something fast. For me, that often equates to a meal that doesn’t have a lot of vegetables. So here’s a tip!
If you know you’re going to have a busy evening, prep the vegetables ahead of time. Keep them in separate containers in the fridge. When you finally make it to the kitchen, dinner will be a simple task!
Have a small family or Cooking for two?
If you’re cooking for two, or if this recipe calls for more veggies than you need, here’s a trick. After you have chopped all of your veggies, split them into 4 different piles.
Use one pile to make dinner and put the three remaining piles in individual freezer bags and stick them in the freezer.
more vegetables than you need or want?
This recipe calls for a lot of vegetables, because my family will literally gobble this up, and eat the entire pan. However, if you have a smaller family, you will probably have some extra vegetables.
You could easily throw them in a bag, and toss them in a freezer. When you need another side dish later on in the week, or even next week, remove them from the freezer and make it again.
We recommend freezing the vegetables fresh, rather than making a huge pan of the stir fry. This will help the vegetables taste more fresh, when you prepare it the second time.
Change up your vegetables:
Whether you’re tired of the same old things or you want to introduce new vegetables to your kids, stir fry is a great way to do it. All of these veggies work great in a stir fry:
- Onions
- Bell peppers
- Broccoli
- Cauliflower
- Zucchini
- Celery
- Mushrooms
- Carrots
- Sugar snap peas
- Green beans
You could really add any of your vegetable favorites and make it your own.

Easy Vegetable Stir Fry Recipe
Ingredients
- 1 red pepper, chopped
- 1 green pepper, chopped
- 1 onion, chopped
- 1 red onion, chopped
- 1 bunch of broccoli, chopped
- 1 bunch of cauliflower, chopped
- 1 zucchini, sliced
- 1 stalk of celery, sliced very thin
- 1 Tablespoon olive oil
- 1 cup Panda Express Mandarin Sauce
- 2 cups cooked shredded chicken

Instructions
- Turn your stove to medium high and heat your oil in a large frying pan. Add all of the veggies that you are using. Mix them so the oil covers the majority of them.
- Cook them for about 5 to 10 minutes, or until all veggies are soft.
- Once they are cooked, put them on a plate and top with shredded cooked chicken. Pour a little Mandarin Sauce over the top. Serve hot.
