Fall is here! That means cozy sweaters, crunchy leaves on the ground, cute boots and PUMPKIN!
I am a sucker for all things pumpkin flavored – cookies, breads, pancakes, drinks – if pumpkin can go in it, then chances are I am going to love it.
Today’s recipe is taking one of the most classic desserts (rice crispy treats) and adding a delicious combination of pumpkin and marshmallow. Rice crispy treats are never going to be the same! The light pumpkin flavor and the fluffy frosting on top will make these quick treats a family favorite!
The secret ingredient in these treats: JET-PUFFED Pumpkin Spice Marshmallows! My kids and I eat these marshmallows straight out of the bag, but they are amazing in rice crispy treats! Top off the crispy treats with a homemade marshmallow frosting and you have an amazing dessert!
Frosted Marshmallow Pumpkin Crispy Treats Recipe
Ingredients
- 4 cups Rice Krispies Cereal
- 8 ounces JET-PUFFED Pumpkin Spice Marshmallows, 1 bag
- ½ cup butter
- ¼ cup corn syrup
- 3.4 ounces instant vanilla pudding mix, 1 box
- ½ teaspoon vanilla extract
- 1 teaspoon pumpkin pie spice
Frosting
- ½ cup butter
- 1½ cups powdered sugar
- 3.5 ounces Kraft JET-PUFFED Marshmallow Creme, ½ jar
- ½ teaspoon vanilla extract
Instructions
- Place cereal in a large bowl and set aside.
- Spray an 8x8" baking pan with non-stick cooking spray.
- In a large saucepan, melt marshmallows with butter and corn syrup over medium-high heat, stirring until completely smooth. Add in vanilla pudding mix, vanilla, and pumpkin pie spice and stir well. Pour over cereal in bowl and mix until completely incorporated, then press into prepared pan. Let set up for about 20 minutes and prepare frosting while waiting.
- For the frosting, cream butter in a mixing bowl with an electric mixer on medium speed until butter is soft and fluffy. Gradually beat in confectioners' sugar, about 1/2 cup at a time; beat in vanilla extract. Gently fold the marshmallow creme into the frosting until thoroughly incorporated. Spread frosting on top of crispy treats and cut into bars.
