I am a total chicken boiler. I boil my chicken every time. However, in the summer, I am a chicken griller, and put grilled chicken in everything.
You could also use an instant pot, or bake chicken, or even use rotisserie chicken, as a short cut. Most grocery store deli’s also sell pre cooked and shredded chicken, that would save a lot of time as well.
Either way, just as long as you have chicken, this recipe will be delicious.

The thing I love about this recipe, is how easy it is to add extra veggies, and still have it taste delicious. I prefer the asparagus in this recipe, but you could easily use or add any veggie you prefer.

- cucumbers
- celery
- spinach
- tomatoes
- corn
- broccoli

Penne with Balsamic Chicken and Roasted Asparagus Recipe
Ingredients
- 1 bunch asparagus
- 1 Tablespoon olive oil
- 2 teaspoons salt
- ½ teaspoon pepper
- ½ cup plus 2 Tablespoons balsamic vinegar
- ½ teaspoon brown sugar
- 1 cup cooked and diced chicken breast
- 1 box whole wheat penne pasta
- ¼ cup butter, cut into pieces
- ⅓ cup grated parmesan cheese
Instructions
- Heat the oven to 400°. Cut the tough ends off the asparagus and discard them. Cut the spears into 1-inch pieces. Put the asparagus on a baking sheet and toss with the oil and 1/4 teaspoon each of the salt and pepper. Roast until tender, about 10 minutes.
- Meanwhile, put the vinegar in a small saucepan. Simmer until 3 tablespoons remain. Stir in the brown sugar and the remaining 1/4 teaspoon pepper. Remove from the heat.
- Cook the penne in a large pot of boiling, salted water until just done, about 13 minutes. Drain the pasta and toss with the butter, vinegar, asparagus, Parmesan, chicken and the salt. Serve with additional Parmesan.
