For when you need an easy recipe during the busy days of the week, make our Slow Cooker Mango Chicken recipe. Crockpot mango salsa chicken is made with simple ingredients.
This is one of my favorite healthy recipes that pair perfectly with coconut rice (we made it last week, so good!) and the total time to make it only adds up to a few minutes of prep.
You could even make this slow cooker mango salsa chicken recipe into to some tasty chicken tacos or lettuce wraps! It is such a great recipe that you can use it in different ways to mix it up yet have a simple meal.
Ingredient Notes:
- Boneless, skinless chicken breasts (mine were frozen you can also use skinless chicken thighs as well)
- Corn drained
- Black beans drained and rinsed
- Mango salsa
- Cumin or to taste
- Lemon pepper or to taste
How to make Slow Cooker Mango Chicken:
- Put chicken breasts in slow cooker.
- Mix all other ingredients in a separate bowl.
- Pour over chicken breasts and cook on high for 4-6 hours.
- Shred chicken with two forks in the crock pot and serve over rice.
- Garnish with cilantro, if desired.
Storing and Other Tips
Store leftover Mango Chicken in airtight containers in the fridge. They will last for 3-4 days in the refrigerator and 4-6 months in the freezer.
If you can’t find Mango Salsa, you can use fresh or frozen mango with regular salsa and 1/4 cup of brown sugar in its place.

Ingredients
- 5 boneless, skinless chicken breasts, (mine were frozen)
- 1 can corn, drained
- 1 can black beans, drained and rinsed
- 3 cups mango salsa
- ½ teaspoon cumin, or to taste
- ½ teaspoon lemon pepper, or to taste
