I am going through an avocado phase right now. They just taste so delicious. This stuffed avocado is something that you could eat with a salad, fish, or even just eat plain as a side dish.
They are incredibly easy to make, and come together in just minutes. They are full of flavor and pair nicely with just about anything.
They are also fairly inexpensive for a side dish. My kids love eating these, because they are so fun. They have the best texture, flavor, and I’m not complaining because they hardly take any time to throw together.
I even ate one for lunch the other day, and my kids love them as after school snacks. They are perfect for any occasion.
what dressing would be good with these?
These are so full of flavor and aren’t a dry food at all, that you necessarily don’t need a dressing. However, I do have a few recommendations, if you are looking for a flavor kick.
Here are a few sauces and glazes I recommend:
–Cilantro Lime Ranch: This is the best dressing in the entire world, I am not exaggerating. It has the best flavor and a little bit of sweet tanginess to it. You will love it with these Stuffed Avocados.
–Balsamic Glaze: This is an amazing combination as well. It is also extremely easy, because I always just buy mine at the store. I don’t have to make it, but just drizzle it on, straight from the bottle. It is delicious on these.
-Buffalo Sauce: This is always a request from my husband. He puts buffalo sauce on just about everything, but this is one thing that I actually agree with. The buffalo sauce is pretty tasty combined with these fresh ingredients.

Healthy Stuffed Avocados Recipe
Ingredients
- 2 whole avocados, halved and removed from skin
- 1 cup cooked shredded chicken
- ½ cup salsa
- 1 tomato, diced
- 3 green onions, sliced
- ⅛ cup shredded Mozzarella cheese
- cilantro, optional topping
Instructions
- Preheat oven to 400 degrees F.
- Cover a cookie sheet in foil.
- Place avocado, cut side down, on the pan to cook.
- Put pan in the oven and cook for about 10 minutes.
- Keep the avocado halves on the pan after taking them out of the oven and set aside.
- Heat oven to broil.
- In a small bowl mix your chicken and salsa together.
- Flip over your avocados and add your salsa chicken, tomato, onions, cheese and cilantro evenly over each one.
- Once your oven is ready, put your avocados back in the oven and broil them for 2 minutes.
