Allow the inner pot to heat up. Once it’s hot pour in 2 tablespoons of olive oil and add in the ground turkey and diced onion.
Brown the ground turkey for 5 minutes or until the onion begins to soften.
Then, add in the rice and the remaining olive oil. Cook that all together for another minute on the SAUTE function.
Next, dump in the salsa, can of undrained corn, can of undrained green chilies, drained and rinsed black beans, and the taco seasoning mix. No need to stir it yet.
Now, pour in the chicken broth on top, making sure that all of the rice is covered by the chicken broth.
Then, put the lid on and turn the knob to the SEALING position.
Once that is done, press the MANUAL or PRESSURE COOK button and set the timer for 8 minutes.
When the timer goes off do a quick release by turning the valve to the VENTING position.
