So it is spring and I don’t feel like cooking lately, so I threw this together and it was REALLY good. And probably the easiest meal I have ever made.
I used the Archer Farms BBQ Sauce, however, it had a little kick to it. If you are not a fan of spicy, I wouldn’t recommend using it. My kids still ate it, but be warned, it has a slight kick to it.
You could also use any other type of Hawaiian, Teriyaki, or barbecue sauce mixture for this chicken recipe. You really can’t go wrong with this one, it is so quick, simple and delicious.
WHAT OTHER CHICKEN COULD I USE FOR THIS RECIPE?
For this recipe, we used chicken breasts. I think they are a bit more juicy and we prefer the white meat.
However you could also use:
- Chicken thighs
- Chicken wings
- Chicken tenders
- Chicken cutlets

You can easily make this recipe in the slow cooker! It just will take a little bit longer to cook. Find the printable recipe HERE.
COULD I MAKE THIS RECIPE INTO A FREEZER MEAL?
I am all about freezer meals. I feel like I hardly have any time to cook these days, so if I can quickly double a recipe that is as easy as this one, and freeze half of it for later, I love that.
This recipe is so easy to throw into a gallon size ziplock bag and keep it in the freezer for up to three months before using it. It saves time and money.
To thaw it, I will place it in the fridge for about 2 hours (or the night before I cook it), then put it in my Instant Pot and cook it for 25 minutes.
If you cook it thawed, it will only be about 20 minutes.

Instant Pot Hawaiian BBQ Chicken Recipe
Ingredients
- 4-6 boneless, skinless chicken breasts, (mine were still frozen!)
- 1 (16 ounce) bottle Archer Farms Hawaiian Style Barbecue Sauce , (from Target)
- 20 ounces Pineapple Chunks, (do not drain - you need the juice so it will pressurize!)
Equipment
Instructions
- Place frozen chicken breasts in the Instant Pot and cover with sauce. Empty can of pineapple chunks and juice on top. Close the lid and turn the knob to SEALING.
- Set the timer to 25 minutes if your chicken is frozen or 18 if you chicken is thawed.
- When it is done, turn the knob to VENTING. When the pressure is released, take the lid off.
- Shred chicken and return to the Instant Pot so the chicken will be well coated with sauce. Serve over rice or cauliflower rice.
- Sometimes I also throw in a chopped up green pepper and chopped onion . . . it tastes good with or without it.
