We are always looking for great side dishes to go along with our meals, and this delicious salad is loaded with veggies. The kids loved it. It’s a great salad for a party.
If I am ever in a hunch and need a quick salad for a pot luck, this is my go to. It is so easy to throw together and it is a hit every time.
I don’t think I have ever brought this to something and someone hasn’t asked me for the recipe.
How to make Loaded macaroni salad
- Cook macaroni according to package directions. Drain well. Rinse with cold water and drain again. Set aside.
- In a small bowl combine the yogurt, mayonnaise, Dijon mustard, honey, white wine vinegar, garlic powder, salt and pepper. Set aside.
- In a large bowl mix together the cooled macaroni, red pepper, tomatoes, eggs, cucumber, carrots, radishes, celery, red onion, and parsley.
- Add in the dressing mixture and toss until well combined. Top with some extra parsley and serve.
How to boil eggs
Boiling eggs, may seem simple, but sometimes they can be easy to peel, and others are almost impossible. Did you know that depends on how you cook them?
We have cracked the code on egg boiling and want to share our secrets with you. Here is how to boil and peel an egg properly.
-Place your eggs in a pot, and cover them with an inch of cold water. Be sure the water is cold.
-Bring the water to a boil over medium high heat.
-Once the water is boiling. let them cook in the boiling water for about 10 minutes.
-After 10 minutes, drain your eggs in cool water, or even ice water. Let them completely cool down before peeling them. They should not be warm to the touch when you peel them.
-Before peeling them, roll them on a hard surface with your hand. Apply enough pressure that the egg shell cracks a little. You don’t want to break the white of the egg, just the egg shell.
Peel from the cracks, and it should come off smoothly, without any problems or grabbing.

Loaded Macaroni Salad Recipe
Ingredients
- 10 ounces elbow macaroni
- ½ cup plain yogurt
- ½ cup mayonnaise
- 3 teaspoons honey Dijon mustard

- 1 ½ Tablespoons white wine vinegar
- ¼ teaspoon garlic powder
- salt and pepper, to taste
- 1 red bell pepper, diced
- ⅔ cup cherry tomatoes, halved
- 3 eggs, hard boiled and diced
- 1 English cucumber, diced
- 1 cup shredded carrots
- 4 radishes, diced
- 3 stalks celery, diced
- ⅓ cup red onion, diced
- 1 Tablespoon fresh parsley, chopped
Instructions
