I know it’s only February, but I am already getting the itch for spring.
As we’ve been trying to eat healthier, salads are now my go-to option for lunch. I know, I know – who am I?
I used to hate eating “rabbit food”, but honestly, with the fresh fruit + yogurt dressing, this tastes more like a sweet treat.
It’s really simple to throw together, and all the ingredients are FRESH. It’s my low-cal version of Zupas’ Mangoberry and I have to say, I LOVE how it turned out.
It only takes a few minutes to throw together and makes a perfect light lunch, or a side dish, for any get together.
Even my kids love this recipe. I highly recommend making it, and trying it for yourself. You will not be sorry.

I love salad dressings. They give the salad just the right amount of flavor, and it tastes amazing. My favorite salad dressing is our poppyseed salad dressing.

could i use frozen mango’s that have been thawed?
If you live in an area where mangoes are rarely in season, or fresh, you could also use the frozen mangoes. I like to thaw mine, then use a strainer to get the juice out so it doesn’t make my salad soggy.
But frozen and thawed mangoes would work just as well for this salad. However, the berries taste best when they are fresh. We recommend only getting frozen mangoes, and the other fruit fresh.

Ingredients
Salad:
- 1 bag spring mix lettuce, (about 6 cups)
- 2 mangoes, peeled and cubed
- 1 cup fresh blueberries
- 2 cups fresh strawberries, sliced
- ½ cup sliced almonds, (I used the candied salad-topper almonds)
Dressing:
- 8 ounces vanilla greek yogurt, (you could use regular yogurt, too)
- 1 Tablespoon lemon juice
- 1 mango, peeled and cubed
- 1 teaspoon honey
- pinch of salt
Instructions
Salad:
- In a large bowl, toss the spring mix, mangoes, blueberries, and strawberries together.Top with sliced almonds.
Dressing:
- In a blender (or food processor) mix together yogurt, lemon juice, mango, honey and salt.Blend until smooth, then pour over salad (or serve on the side)
