I was craving our Mom’s pasta salad, and thought it would be really good with a little Mediterranean twist.
I found this recipe and tweaked it, and we will be eating this one again and again and again.
Ingredients in Mediterranean Chicken and Orzo Salad:
- 8 ounces orzo pasta
- 1/2 cup olive oil
- 1/3 cup white wine vinegar
- 2 teaspoons dijon mustard
- 1 teaspoon garlic powder
- 1 teaspoon oregano
- 1 teaspoon basil
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup grape tomatoes
- 1/2 cup kalamata olives
- 1/2 cucumber, cubed
- 2 chicken breasts, cooked and cubed
- 2 ounces crumbled feta cheese

- Cook pasta according to package instructions. Drain and set aside.
- In a small bowl, combine olive oil, vinegar, mustard, garlic powder, oregano, basil, onion powder, salt, and pepper.
- In a large bowl, mix together tomatoes, olives, cucumber, chicken, orzo, and dressing. Top with crumbled feta cheese and enjoy.
