Strawberries and Cheesecake were just meant for each other. These Mini Strawberry Cheesecakes are so delicious and addicting. But it’s fruit… so I didn’t feel too guilty about eating 6 of them.
They come together in a matter of minutes and are just the right size. They are the perfect finger food for serving a crowd, and are so yummy. You are going to love these.
You could also use a different fruit, or add any sweet topping you prefer.
They are so quick, and have the most amazing flavor. Also, they hardly require any ingredients, so they are perfect for a light and healthy dessert when you are in a hurry.

What other fruits or sweet treats could I make this with?
I personally love this recipe the best with strawberries, however, you could easily mix it up, with any of your favorite fruits.
I use strawberries, because I can fill them up with the cream cheese mixture, but you could easily use any fruit, and dollop it on top.
Here are a few of our favorite fruits to make this recipe with:
-Raspberries
-Pineapple
-Orange Slices
-Bananas
-Blackberries
-Cantaloupe
-Cherries
You could also use other things that are not fruit. Here is what we recommend:
-Angel Food Cake
-Graham Crackers
-Vanilla Wafers
-Vanilla Oreo’s
-Rice Krispie Treats
If you do one of the sweeter bases, you could top it with chocolate syrup, melted white chocolate, milk chocolate, sprinkles, fruit, or even your favorite candy crumbled on top (I like Reese’s and my husband likes Butterfingers).

Mini Strawberry Cheesecakes Recipe
Ingredients
- 8 ounces cream cheese
- 20 strawberries
- 2 teaspoons lemon juice
- ¾ cup powdered sugar
- 20 graham cracker cookie sticks
Equipment
Instructions
- In a medium sized bowl, combine cream cheese, powdered sugar, and lemon juice. Mix until creamy.
- Wash and cut the stems off the strawberries and carve out the white center, so it is just a red hollow strawberry.
- Scoop Cream cheese mixture into a small plastic sandwich bag.
- Zip up the bag and cut a small hole in one of the bottom corners.
- Squeeze out the cheesecake filling into the hollow strawberry.
- Place a graham cracker stick into the side of the cream cheese filling
- Refrigerate until ready to serve.
